Eggplant Cake

Isn’t it ironic that 1 Egg Man makes cakes out of Egg plant?  Here is his recipe and comments:

 

That eggplant cake is easy to make and it’s just something I do to use up excess veggies. Here’s the recipe.

You need:
1 cake mix-yellow
1 small box instant vanilla pudding
1/2 tsp. nutmeg
1/4 tsp. ea. of cinnamon, cloves and salt.
4 eggs
1/4 cup of oil
1 cup sour cream
2 cups eggplant – grated.

Grease a bundt pan and set oven at 350 degrees. Mix dry ingredients and egg plant and then add eggs, sour cream and oil. Mix well. Bake at 350 for about 70 minutes, then let cool about 15 minutes before removing from pan. Eat as is or sprinkle with powdered sugar. This is a good and easy way to use up that excess eggplant and I use the same recipe for zucchini. You want to peel the eggplant and I also grate mine coarse.
