Easy  Chicken Enchilada Casserole with Green Sauce

Serves 6  
Ingred: 4 boneless,skinless chicken breasts-cooked and diced.
        3 cups of cooked rice
        1 small onion, diced
        1 (4oz.) can of diced green chilis  (personally I buy  the       next  biggest can)
        1 (3.8oz) can sliced olives
        1 large can (28oz) Mild green enchilada sauce
        1 can (10.5oz)Cream of Chicken soup
        4 cups shredded Jack or Colby Jack cheese
        Sour cream and Chopped green onions for garnish

Directions: Preheat oven to 350 degrees.
Give Casserole pan/Dish a light spray of non-stick cooking spray.

In a large bowl, combine Diced chicken,cooked rice,diced onion,green chilis,olives, enchilada sauce,cream of chicken soup and cheese.

Mix until well blended.
Pour mixture into Casserole Pan/Dish. Place in oven and cook for 30 minutes.
Take out of oven and let sit 10 min.

Serve on plates with sour cream, green onions and maybe some green salad.
(my family also likes to have some tortialla chips with this)Serves 6+
