Quick Pickled Eggs and Beets Recipe

1 Egg Man just shared his recipe for Pickled Eggs on the NAT. 

Here it is:


1 Egg Man’s Pickled Eggs


2 cans sliced beets w/juice
1 dozen hard boiled eggs
1 cup vinegar
1 cup sugar (you can use a little more if you like them sweeter)
1 onion sliced thin

Put beets w/juice, onion, sugar and vinegar in pot, bring to a boil and boil for about 5 minutes.

Meanwhile, peel eggs and put in a container ( we use a Glad, square 13 cup and the eggs fit perfectly) that will hold all the eggs on the bottom.

Next, using a slotted spoon, remove the beets and onions from the pot and spread them over the eggs. This will help keep the egg submerged and they will color quicker. Once the beets and eggs are removed from the pot, add the liquid and it should cover the eggs.

Let set in fridge for a few days and then enjoy. I’ll add some more eggs as those are eaten and make a new batch when the beets get low.
